The 2 induction burners on my current old JennAire cooktop do make
a clicking sound when the burner is on.  (And one does need to
have something ON the burner when it is turned on.  Mine squeals
when there is nothing on the burner; many just turn off.)

As for the heat, the cooktop retains heat from the vessel that was
on it.  I can touch mine at that point.  It is not hot enough to
burn me or set anything on fire, but it is hot.

In my other house, I have a new GE induction cooktop.  (My love of
induction obviously overcame my extreme dislike of smooth
cooktops.)  I looked at every make of induction cooktop that is
around, and also did research online.  I saw no real benefit from
the pricier cooktops.

Just responding to this so this post gets bumped to the top as I would also like to hear from others with advice on this topic. I have an electric stove top at the moment but much prefer gas, but would like to hear from others regarding an induction cook top.

Although most chefs prefer gas over electric because claims of "cooking better"; I have found that they also costs more to operate. Living in a rural area the price of propane is usually higher than the costs of electricity. However, in urban areas I am not sure what the costs may differ. Since we are out in the country we have a large propane tank which costs between $600 - $1000 every time we have it filled. Under normal conditions we have it filled 2 - 3 times annually. But not only do we operate the stove with this fuel but also our heating system in the winter.
