Cheesecake recipe?

Does anyone have a quick and easy cheesecake recipe? I used to make cherry cheesecake a lot, and the recipe was great, but I have misplaced it...  :(

My brother makes a mean cheesecake, I will be visiting this weekend and I will get you the recipe. Do you like fruit?

I have a version of a cheesecake in the fridge right now that my wife and I like.

I melt a container of light spreadable cream cheese, sweeten it with some honey and add a drained, thawed package of frozen strawberries.

I mix that up and pour it into a pre-made pie crust. (sort of a graham crumb kind, I think) Then I bake that for about 15 minutes or so at about 275. It seems to set better after a day or two in the fridge.

As you can probably tell, I don't have it down to an exact art with measurements. Also, I remove the condensation from the plastic cover of the container after it's been in the cold for a while.

You're welcome, lobster. Glad to hear about its success. I'd like to try it with raspberries some time. I've tried a chocolate version, but I didn't get it sweet enough.

Thanks Ricardo, that sounds like a great recipe! I have been using pre-made Graham pie crust as well. The cheesecake I made did not require cooking though, I'd just mix cream cheese with cool whip and top it with cherry topping.

wow. that sure sounds like a great summer treat for the whole family huh! id better try that out! but may i ask any brand recommended for the cream cheese? And no more baking, just freezing?...thanks

Bammer, we use whatever cream cheese is on sale.   No baking at all, just put in the frig and you are good to go.

This is great! I've read this post of yours a few hours ago and tried it since I've nothing else to do this day. I was actually curious with it since you're only going to freeze it. It was very nice. Thanks for this, I'll add it to my personal recipe book.

I think I'm going to try this for weekend. My little sister love strawberries! This will work for mom and dad too because the only sweetener that you used is honey. Thanks Ricardo...
