Looking for potato salad
« on: May, 17, 2009, 06:58:12 PM »
I was asked to make potato salad for our Memorial Day picnic.  My mom usually makes it but won't be in town this weekend.

Can someone share their recipe for potato salad.  I like regular and German potato.

Thanks in advance!

Forgive me for being stupid but is German Potato salad the salad with the little red potatoes and bacon? There is no mayo in it--right? I think you use vinegar?

I love that salad.

I know my boyfriend's mother made really good regular potato salad. She would add bacon in hers--but mayo as well. It is the only potato salad I would eat.

I will have to keep looking for a recipe for you. :)

Oh please do, as it sounds delicious!  We never added bacon to any salad besides German potato salad.  I think  bacon sounds great in regular potato salad too.

I would appreciate a recipe   ;D  Moms always have the BEST recipes.

Here is my recipe for "regular": Boil potatoes (I peel them afterwards) and eggs, chop them, mix. Add mayo, some mustard, some salt, and a sprinkle of black pepper, if you like it. That's it! :)

I like useing recipes from Taste of Home.  Here is theirs for German Potato Salad:

Ingredients:
3 pounds medium red potatoes
5 bacon strips, diced
1 medium onion, chopped
1/4 cup all-purpose flour
2 teaspoons salt
1/4 teaspoon celery seed
1/4 teaspoon pepper
1-1/4 cups Domino® or C&H® Granulated Pure Cane Sugar
1 cup cider vinegar
3/4 cup water
3 tablespoons minced fresh parsley
Directions:
Place the potatoes in a Dutch oven or large saucepan; cover with water. Bring to a boil. Reduce heat; cover and simmer for 25-30 minutes or until tender. Drain and rinse in cold water. Refrigerate until cooled; cut potatoes into 1/4-in. slices.
In a large skillet, cook bacon over medium heat until crisp; remove to paper towels. Drain, reserving 4 tablespoons drippings. In the drippings, saute the onion until tender. Stir in the flour, salt, celery seed and pepper until blended. Gradually add the sugar, vinegar and water. Bring to a boil over medium-high heat; cook and stir for 2 minutes or until thickened.
Reduce heat to low. Add the potatoes and bacon; stir gently. Sprinkle with parsley. Serve warm. Yield: 8 servings

Yum... both sound really good. Thanks for sharing.  I used to get the Taste of Home magazine, but no longer do.  I get Everyday with Rachel Ray- her recipes are always a little too much for me (too fancy).

I also like to add some minced dill pickles.  It adds a fun kick that you don't usually get in potato salad!  You can also try spicy mustard if you want.

Now that sounds like what I'm thinking about.  Adding extra kick to it.  How about mashed potatoes too.  I'm sick of the same old bland taste to them.  What can I add to them to kick it up a bit?

It makes me wonder how I have never thought of it? I like dill pickles, and they always go great with potatoes - fried, mashed, baked, any kind. I'm sure they would mix perfectly in a potato salad. Gotta try!  :)
